Myth has it that this article of clothing made from cotton, silk, or satin is traditionally never to be washed. Time and use turn the initially white fabric yellow, then brown, and finally black with dirt and sweat. These colors would represent the level of proficiency of the wearer.

In reality, this color categorization system is a fairly modern invention, and tradition has nothing to do with it.
